When catering a taco bar for 50 guests, estimating meat quantities is the single largest budget and satisfaction factor.

The Standard Rule of Thumb

  • Tacos per Adult: 3 tacos
  • Total Tacos Needed: 150 tacos
  • Cooked Meat Portion: 2.0 oz per taco = 300 oz (18.75 lbs cooked meat)

Accounting for Raw Cooking Shrinkage

Raw ground beef (80/20) loses approximately 22% of its weight during browning and rendering fat.

To end up with 18.75 lbs of cooked ground beef, you must purchase:

Raw Meat Needed = 18.75 lbs cooked / (1 - 0.22 shrinkage) = 24.0 lbs raw
