10 Taco Bar Buffet Mistakes to Avoid

A successful taco party depends as much on logistics as it does on seasoning. Here are the top mistakes caterers watch out for:

1. Placing Utensils and Napkins First

Never put forks and napkins at the beginning of the table. Guests cannot hold cutlery while scooping beans, ladling salsa, and assembling tortillas. Put napkins strictly at the exit end.

2. Letting Tortillas Go Cold

Cold corn tortillas crack and break in half. Keep tortillas wrapped in foil inside insulated warmers or a dedicated slow cooker lined with a clean towel.

3. Holding Meat Below 140°F

To comply with USDA food safety standards, maintain hot holding dishes above 140°F (60°C). Add a few spoonfuls of warm broth every 30 minutes to prevent edge drying.
